Chantalle is a hospitality professional with a keen eye for processes and a delicate management style. She has worked at some of Melbourne's most prestigious venues, where she gained a deep understanding of hospitality and customer service. Chantalle's exceptional work ethic, kind nature, and thirst for knowledge and growth have made her a center of authority among her colleagues. It was not long before Fable Melbourne recognized her talents and promoted her to Bar Manager within under a year. Chantalle's innate leadership abilities and desire for excellence make her a great role model for other women in hospitality

ALEX XINIS
Executive Chef
Alex boasts stints in Athens, Greece at Two-Michelin starred restaurant Funky Gourmet. Partnered with the role of Head Chef at ``The Press Club`` - George Calombaris' flagship restaurant, where the restaurant secured its two-hat status in the Age Good Food Guide. There's no doubt he has a flair for the cuisine he grew up eating.

MICHAEL PASTRANA
Head chef
Michael has a great passion for cooking and gourmet food. His experience ranges from cafes to high end restaurants starting from the bottom and working his way up to Head Chef positions. In his past, Micheal owned and managed several restaurants overseas until he decided to take the opportunity to move to Melbourne where he studied and learnt the secrets of western cuisine and further developed his set of skills and knowledge.
